"Attack my target" causes your wingmen to attack whichever object is your target at the time that they are given the order, and then once it is destroyed, check your target again and repeat. They will only attack enemy vessels, and will engage to the death, only selecting a new target once the first is destroyed. Issuing a new order will stop this command.
"Protect me" causes your wingmen to fall into formation with your current ship, and then to attack and destroy any ships which cause damage to your ship. They will only attack enemy vessels, and will engage to the death, only selecting a new target once the first is destroyed. Issuing a new order will stop this command.
